Agave Raspberry Jam

 

Here is a great recipe for Raspberry Jam using Xagave.  Most jam recipes call for anywhere from 5 to 6 cups of sugar!  By substituting two cups of Xagave in place of sugar, you save up to 3,000 calories in the entire recipe.  Not to mention it tastes delicious!

 

Raspberries
Ingredients:

4 lbs. raspberries
2 cups Xagave
Juice from 1/2 lemon
1 tsp. lemon zest

 

Steps:

Put all ingredients directly into pot.  Bring to a boil and reduce to simmer. Let simmer for 30 minutes, stirring occasionally.  Pour mixture into an airtight container and store in refrigerator.  Jam will store for several months in the refrigerator or follow standard canning or freezer jam procedures. Serving size is 1 tbsp.

    So does this set up ok without pectin?

      Yes, it should set up ok. Agave does not react with pectin so you shouldn’t use it in this recipe. If you would prefer a thicker jam you can add Ultra- Gel or corn starch.

    I’m marrying a fine young Italian with a father who has an obsession with figs. We have 2 fig trees in our yard, I think he 4 or 5 in his yard! Needless to say, we have A LOT of figs! I have recipe for fig jam that I want to try, but the amount of sugar that it calls for is beyond my realm of thinking…. Can I use agave instead of sugar?

      You can definately substitute agave for the sugar in a fig jam recipe. We recommend using half of what the original recipe says; if it calls for six cups of sugar, use 3 cups of Xagave instead!
