Happy Beef with Guiness

 Here is a timely recipe for the Irish by Chef Frank!
 

 

 

 

 

 

Ingredients:
2 lbs. beef brisket, cut into 1X2 inch cubes
1 tsp sea salt
1/2 tsp fresh ground black pepper
4 tbsp olive oil
2 yellow onions, peeled and rough chopped (about 1 1/2 cups)
3 tbsp whole wheat flour, mixed with 1/4 cup water in a slurry
1 pint Guinness Stout
1/2 cup beef stock
2 tsp XAGAVE
2 cloves fresh garlic, minced
1 bouquet garni (tie together with butcher string,one sprig of fresh thyme, rosemary, bay leaves and sage)
4 whole carrots, washed, peeled, then julienne cut (thin strips) for garnish
1 small roll of Pillsbury refrigerated biscuit dough 
 
Steps:
Pre-heat oven to 350*F
Sprinkle your cubed beef, heavily with S&P
Add olive oil to a 12 inch sautee pan over high heat
Brown meat in small groups. 4 or 5 cubes at one time. As the beef cubes brown, remove them and place in a Dutch Oven and repeat with other cubes, until all beef cubes have been browned and transferred to the Dutch Oven
Add onions to the sautee pan that was used to brown the cubed beef andcook onions until light brown. Remove to Dutch Oven.
Deglaze the sautee pan with 1/2 cup Guinness Stout, then turn your sautee pan off and pour deglazed mixture into Dutch Oven
Add the XAGAVE, remaining Guinness, flour/water slurry, beef stock, garlic and bouquet garni to the Dutch Oven
Cover Dutch Oven and place it inside your 350* pre-heated oven for 2 hours and 20 minutes.
With 20 minutes remaining on the Happy Beef with Guinness, boil water with a pinch of sea salt.
Add juilienne carrots to boiling water for 90 seconds, then transfer to a bowl of ice water. Hold for garnish
Remove your Happy Beef with Guinness from the oven, uncover the Dutch Oven, remove bouquet garni and discard
Separate biscuit dough into 4 individual portions of uncooked biscuit. Cut each portion in half, then roll each small portion into a ball the size of a golf ball, then add your 8 dough balls (dumplings) to the Dutch Oven, bubbly mixture and cover the Dutch Oven again for 10 minutes.
Remove the lid to the Dutch Oven and serve your Happy Beef with Guinness over mashed potatoes.
Garnish with julienne carrots.
