Happy Pear Salsa

Since USA pears are in season right now, Chef Frank has created a wonderful recipe for pear salsa!salsa

 

 

 

 

 

 

 

Ingredients:

1 Anjou pear
1 Bosc pear
1 Comice pear
6 ripe Roma tomatoes
1/4 cup XAGAVE sweetener
1/2 cup apple cider vinegar
1 medium red onion,1/2 cup diced fine
2 jalapeno peppers, seeded and diced fine
1 clove fresh garlic, minced
3 sprigs fresh cilantro leaves, diced or torn small
1 tsp. sea salt
1 tsp fresh ground black pepper

Preparation:

Wash pears, peel away skin, cut in half and remove seeds and cut pears into small chunks
Wash tomatoes and cut into quarters. Remove meat and seeds, cut skin into small chunks
Place above fruit in a large glass bowl and add XAGAVE and gently stir to coat fruit
Add remaining ingredients and gently toss to combine flavors
Place in a refrigerator for 30 minutes
Stir gently before serving.

This is a great salsa with corn chips, or fill a pita with your Happy Pear Salsa and watercress for lunch; or place this salsa over a tenderloin of turkey and bake at 350*F for 45 minutes or until the internal temperature of the turkey loin is at least 155*F.
