Chef Brad Petersen is an Arizona native whose love for food began when he was 9 years old. He has been involved in all areas of the restaurant business, from waiting tables to cooking and management. Chef Brad’s cooking passion is grains, and has written two cookbooks specifically for working with grains. He enjoys traveling as a motivational speaker, having appeared on television and radio, as well as in the newspaper. Chef Brad is a firm believer in creating “Fond Food Memories” whenever possible.
I made the peanut butter vegan bars and had trouble with the topping. I melted the chocolate and when I added the Xagave, the mixture crystalized and turned real stiff. Everything tasted great tho. . . . .what should I do different?
