Here is a zesty recipe for lemon poppyseed pound cake with a Xagave twist!

Ingredients:
1/4 cup poppy seeds
1 teaspoon freshly grated lemon zest
1 teaspoon lemon juice
1 cup plain low fat yogurt
2 cups flour
2 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
2 eggs
3/4 cup vegetable oil
1 teaspoon pure vanilla extract
1 teaspoon almond extract
1/2 cup Xagave
Steps:
Combine yogurt, poppy seets, lemon zest and lemon juice and place in fridge.
Preheat oven to 350 degrees.
Combine all dry ingredients in medium sized bowl.
Mix vanilla and almond extracts with the yogurt mixture from the fridge. Combine with dry ingredients. Beat in eggs, oil and Xagave. Pour batter into a nonstick loaf pan.
Bake for 1 hour or until top is cracked and golden.
