Ingredients:
1 sheet frozen puff pastry, thawed in the refrigerator
½ pound mascarpone cheese
2/3 cup Xagave nectar
2 eggs
¾ cup heavy cream
dash of salt
½ teaspoon vanilla extract
3 bosc pears, cored and thinly sliced
Steps:
Preheat the oven to 375 degrees F. Unfold the sheet of puff pastry and fit into a large round tart pan (12×12), pinch edges to form a generous rim. In a bowl, whisk together the cheese, eggs, agave, cream, salt and vanilla until a smooth creamy filling is made. Spread this over the bottom of the pastry. Arrange sliced pears in a concentric circle on top of cheese layer. Bake until the pastry is puffed and browned and the pears are lightly golden, about 30 minutes. Remove from oven, and let rest for 10 minutes.
Serve warm or at room temperature, cut into wedges.
