Pear Kuchen made with Agave Nectar

This is a family favorite that I can recall from weekend mornings from growing up. For years I thought it was called “Pear Cooking” since I didn’t realize that Kuchen is a German word for Cake. This Kuchen recipe takes advantage of the Pear fall harvest as the blend of flavors is a delight, especially with a little Xagave whipped cream on top. The caloric and health savings come from using a 1/2 cup of Xagave instead of a full cup of sugar and by using Whole Wheat Pastry Flour instead of White Flour.
Pear Kuchen
Ingredients
Base:
1/3 cup butter
Drizzle of Xagave
3 tbsp quick quaker oates
3/4 tsp cinnamon
Topping:
4-6 pears sliced and peeled
1 1/2 cup whole wheat pastry flour
1/2 cup xagave
1 tsp salt
2 tsp baking powder
1 cup milk
Steps:
Melt the butter in a 8″ x 12″ pan (I suggest putting the pan in the over as you’re preheating it). For the base, combine the Xagave, oats and cinnamon and sprinkle over the butter. Now peal and slice your pears into 1/4 inch pieces and place on top. In a separate bowl combine the flour, Xagave, salt, baking powder and milk and stir with a whisk until smooth. Pour this over the top of the pears and bake at 350º for 35-40 minutes or until a toothpick can be inserted and removed cleanly.
