Sweet Freakin' Potato Muffins

Ingredients:

2 eggs
1cup milk
1/2 stick margarine or butter
1 cup Xagave
1 1/4 cup mashed sweet potatoes, fresh or canned, if canned warm before mashing
1 1/2 cup whole wheat flour
2 tsp. baking powder
1 tsp. cinnamon
1/4 tsp. nutmeg and salt
1/2 cup raisins
1/4 cup chopped pecans- can add a little extra pecans and raisins                                                                                1 tsp vanilla

 

Steps:

Cream margarine and Xagave well, add eggs, vanilla, and sweet potatoes, beat well with mixer. Mix flour (1 cup) , baking powder, salt, cinnamon, nutmeg well in another bowl.
Mix other 1/2 cup flour with pecans and raisins in still yet another bowl.
Add flour and milk alternately with sweet potato mixture, adding raisins and pecans last.
Bake in greased (Pam) muffin pans in 350 degrees over for about 20-22 minutes. Use wooden tooth pick to test. You can double or triple this recipe and they freeze very well!!!!

    This recipe calls for sugar, so should I be using 1 1/4 cup of Xagave or 3/4 cup of Xagave. I can’t use sugar as my daughter is allergic. I was actually surprised to see sugar listed in the recipe. Thanks for your help

  2. Thanks so much for pointing that out! That was the original recipe, I went ahead and made all of the adjustments. As you will notice, the correct Xagave amount is listed instead of sugar and we also used whole wheat flour instead of regular flour.

    I made these last night, doing them for my baby’s birthday with frosting. Then didnt rise like I would expect muffins to. My baking powder is still good, or at least within the date. What could my error have been? I followed the instructions completely. They also stayed moist (similar to how brownies stay moist) which I assume is normal given the sweet potatoes. They tasted fine, even better with the cream cheese frosting I whipped up. I was just wondering if I did something wrong. Thank you.

    • We noticed the same thing when we made these so you probably did everything correctly. But because the ingredients in this recipe are more like a sweet bread, the mufifns don’t rise as much as a regular muffin recipe would.
      I must say that the cream cheese frosting on top sounds like a great idea!
