Preheat oven to 325ºF. Grease and flour two 9x5x3 inch loaf pans. Combine eggs, oil, Xagave, zucchini, vanilla and mix well. Sift flour, baking soda, salt cinnamon and baking powder together. Add dry ingredients to wet ingredients and mix well. Stir in chopped nuts (optional). Pour batter into prepared pans. Bake at 325ºF for 45 to 55 minutes or until toothpick inserted comes out clean.
Makes two loaves.
I love finding recipes to use with my newly-found Xagave, however calorie counts and serving sizes would be very helpful.
